I have fallen in love with essential oils! In the past I have used a few to make scrubs and body oils but never really knew much about the different qualities. I recently was introduced to doTERRA essential oils which are sourced from all around the world and are tested to be Certified Pure Therapeutic Grade. Many (not all) of the oils are safe to ingest and can be added to food or drinks, however because they are so concentrated only a very small amount is needed to get the flavouring.
Peppermint is my favourite flavour and I always make desserts using peppermint essence. Once I got my hands on a bottle of doTerra essential peppermint oil I had to try out this recipe that combines the mild coconut taste of Pure Naturally Coconut oil with intense peppermint.

¾ cup almonds
¼ cup goji berries
12 medjool dates, seeds removed
2Tbsp Pure Naturally Coconut Oil
1 drop doTerra essential peppermint oil
- Place all ingredients into a food processer and mix until the mixture starts to come together. If mixture is too dry add more coconut oil 1tsp at a time until it reaches the desired consistency
- Press the mixture into a small square or rectangular pan so that it is an even layer approximately 1cm thick.
- Cover and place in the fridge for 1 hour. Cut into bars and serve or keep in the fridge as a healthy treat.
To make a chocolate version add 2 Tablespoon of raw cacao powder.
